Banana and chocolate pancakes

When i realized how easy it is to quickly make up a batch of healthy pancakes, I started experimenting with different flavours. This has got to be my favourite combination and it is so easy to make lots for everyone to create their own stack and dress it with what they want.

For one person

Ingredients:
1 and a half ripe bananas
1 tablespoon of cacao powder or cocoa powder
30 grams of oats
1 egg
coconut oil for cooking
50 grams yoghurt (I used fage total greek yoghurt)
cacao nibs or chocolate chips
honey or maple syrup


Recipe:
1. Blitz oats in a food processor or nutri-bullet until fine.
2. Add one banana, egg, cacao powder and a teaspoon of maple or honey (optional for extra sweetness)- BLEND
3. Heat about a teaspoon of coconut oil in pan until base of pan is covered.
4. Pour the pancake mixture in the pan to form the size you want (I make mini ones).
5. When you see bubbles forming on the top, flip it over with a spatula.
6. When slightly golden on both sides place it on a plate in the oven on a low heat to keep it warm whilst you cook the others.
7. Once you have made all of your pancakes, take them out the oven and begin to assemble you pancake stack.
8. Add a big spoonful of yoghurt on the top, sliced banana, honey or maple syrup and cacao nibs.
9. Enjoy!
