Easiest gingerbread cookies

Gingerbread cookies
(dairy and refined sugar free)




Ingredients:

200g oats
80g ground almonds
2 tablespoons maple syrup
1 teaspoon ground ginger
1 and a half teaspoons cinnamon
tablespoon of peanut butter
tablespoon of melted coconut oil plus extra for greasing oven tray


Method:

1. Add your oats to blender/food processor and blend until fine
2. Add the rest of your ingredients and blend
3. Use grease-proof paper on oven tray and grease with a little coconut oil to prevent sticking
4. Use hands to pick up mixture and form small balls (be careful of the blade).
5. Use hands to press them down into cookie shapes onto the tray.
6. Put them in the oven for 8-10 minute or until slightly golden on the top.
7. Let cool and enjoy :)
