Shrove Tuesday!

Happy Pancake Day These pancakes feel like such a treat but are full of nutritious ingredients and can really satisfy that sweet tooth. Give these a go today or this weekend and jump on the pancake bandwagon ;) I recommend to make lots of small pancakes, put them in the middle of the table with all the toppings and let everyone build their own stack. Ingredients (for three): 3 ripe bananas 100g oats 40g ground almonds (or just use more oats) 4 eggs 1 tsp of vanilla extract splash of milk 1 teaspoon of coconut oil Toppings: extra slices banana frozen berries honey nut butter (I used pip and nut or meridian) Method: 1) Put the oats in a food processor or blender and grind them down to a fine consistency (like flour) 2) Add bananas, almonds, eggs and vanilla then blend. 3) Add a splash of milk until the mixture is pour-able but not too thick. 4) Heat a pan with coconut oil and let it melt. 5) Use a large spoo

Lemon and Poppy Seed Cake

We believe life is all about balance- have your cake and eat it too!   Uncomplicated ingredients. Real food to satisfy that sweet tooth. Please note: if you don't have cup measurements, just use the same small mug for each ingredient. Should make 6-8 slices depending on portion control ;) Ingredients: 1 whole lemon 2 eggs 1/2 cup of oats (ground down) 1/2 cup of ground almonds 1/2 cup of self-raising flour 1/3 cup of coconut sugar 1/4 cup of honey or maple syrup 1/3 cup of milk (your choice- can use cows, almond, oat, cashew etc). 1/4 cup of melted coconut oil  1 tsp poppy seeds (optional) 1 tsp vanilla extract For glaze/drizzle: extra honey lemon juice and zest a pitch of poppy seeds Method: 1) Preheat the oven to 180 degrees.  2) Line a loaf tin with baking paper and coconut oil. 3) Put your oats into a food processor until ground down into flour consistency.  4) Add the self-raising flour, ground almonds, vanilla, honey,

Valentines Truffles

For our first cookery class of the week we decided to make some chocolate truffles for valentines day. At first, we thought that it would be a long shot trying to get the children to make healthier versions of chocolate truffles (or as we call them, 'energy balls'). So we decided that we would set the intention to make them for their loved one for valentines. However, half way through we noticed some eating the mixture as if it was chocolate. It was lovely to think that what they were eating also had some nutritional benefit to them whilst they were enjoying the chocolate flavour. We also rolled some of the balls into coconut and some we drizzled with melted dark and milk chocolate as it is important not to be too restrictive.  We aim to make our classes fun for the children to develop many skills such as physical motor skills as well as social skills. We also aim for our recipes to take a healthier approach with more use of natural sugars and less of refined sugar. Som

Pizza Making Fun!

We always love doing the children's cookery classes in the school holidays.  Today the children made their own pizzas.  We first made our own tomato sauce base using cherry tomatoes, garlic, olive oil, fresh basil and a can of tinned tomato. They measured out all of the ingredients and kneaded their dough. Whilst we waited for the dough to rise, we chopped up the toppings for our pizzas (peppers, mozzarella and olives). The children then assembled the pizzas how they wanted them and we decorated plates whilst we waited for them to cook- patiently.. Raspberry 'no cheecake' recipe

This yummy treat is vegan and refined sugar free Great for a dessert or afternoon treat! -To prepare the night before:  1. Soak the cashews in water overnight 2. Put the can of coconut milk in the fridge overnight Ingredients: Base- 100g of coconut  200g of nuts (your choice) 200g of soft dates 1 tablespoon melted coconut oil Filling- 200 grams of cashews  1 can of coconut milk 2 tablespoons of coconut oil 6 table spoons of maple syrup (add more if you need extra sweetness) 150g frozen raspberries Method: 1. In a food processor, blitz up all of the ingredients for the base until combined. If you can press the mixture into your hand and it forms a ball then it is ready- if not add a tablespoon of water to help it. 2. Grease a tart tin or whatever you want to use with coconut oil. 3. Put the mixture into the tin and press it down with your fingers until it is covered. You can use a hot spoon at the end to help it smooth out into all of the areas. Then pop i

Chocolate molten lava cakes

This is my first time making these cakes and they turned out pretty good- and taste amazing!! A naughty-but nice treat that is vegan, gluten free and refined sugar free. I want to share the recipe for others to enjoy them too... Makes 3 large ones Ingredients: For the cake- 1/3 cup oats 1/3 cup walnuts 1/3 cup of raisins 1/3 cup of dates 1/4 cup of cacao powder or coco powder For the chocolate sauce filling- 1/4 cup of coconut oil 1/4 cup of maple syrup TBS of cacao powder or coco powder A few dates Non dairy-milk (oat, hazelnut, coconut, almond) Decoration- Cacao nibs dried cranberries Method: 1) Blitz all of the cake ingredients in a food processor until broken down then add a dash of water and continue until it form a mixture that you can press in your hands into a ball but doesn't stick too much. 2) Remove the cake mixture and separate it into two thirds and one third (which will be used for the top) 3) Grease a cupcake tray with some coconut oil t
