Chocolate molten lava cakes

This is my first time making these cakes and they turned out pretty good- and taste amazing!!
A naughty-but nice treat that is vegan, gluten free and refined sugar free.

I want to share the recipe for others to enjoy them too...



Makes 3 large ones
Ingredients:
For the cake-
1/3 cup oats
1/3 cup walnuts
1/3 cup of raisins
1/3 cup of dates
1/4 cup of cacao powder or coco powder

For the chocolate sauce filling-
1/4 cup of coconut oil
1/4 cup of maple syrup
TBS of cacao powder or coco powder
A few dates
Non dairy-milk (oat, hazelnut, coconut, almond)

Decoration-
Cacao nibs
dried cranberries


Method:
1) Blitz all of the cake ingredients in a food processor until broken down then add a dash of water and continue until it form a mixture that you can press in your hands into a ball but doesn't stick too much.

2) Remove the cake mixture and separate it into two thirds and one third (which will be used for the top)

3) Grease a cupcake tray with some coconut oil then get a small handful of cake mixture and push it into one of the cupcake holes and manipulate it to form a casing and make sure there is room for the chocolate sauce- do this three times then pop them in the fridge.

4) Using the food processor again blend all of the ingredients for the chocolate sauce apart from the milk. Once blended into a paste, add the milk slowly until it becomes liquidy like a chocolate sauce- but not too runny.

5) Take the cakes out of the fridge and poor the sauce into the little cases that have been made with the cake mixture. Fill them roughly to the top.

6) Using the remaining one third of cake mixture you have, use your hands to separate it into three and make lids to cover the chocolate sauce and also meet the edge of the cake casing underneath.

7) Use a fork to press down the sides gently so you have no holes for the sauce to leek out then put them in the fridge.

8) Take them out about half an hour before you want to enjoy them so that the middle has time to become sauce again.

9) Decorate with dried cranberries and cacao nibs or whatever you can find it the cupboards (walnuts, pumpkin seeds, sunflower seeds or goji berries would work too)

10) Eat and enjoy!!
