Quinoa bowl

      Quinoa bowl recipe 


Ingredients:

100g mushrooms
80g cherry tomatoes
1 whole pepper
half a small onion
half a lemon
60g uncooked quinoa and brown rice mix
1 teaspoon turmeric
1 teaspoon smoked paprika
handful of spinach
pomegranate seeds

Method:

1. Preheat oven to 180C
2. Chop up the veg and put on a baking dish
3. Add spices and salt and pepper and juice of lemon then mix all together.
4. Put in the oven and boil the kettle.
5. Put your quinoa and brown rice mix (could use either or) into a pan and top up with boiling water.
6. Let cook for about 10-15 minutes, drain it then wait for vegetables.
7. Once vegetables have had 20 minutes take them out and stir spinach into the veg and let it wilt slightly.
8. Add quinoa and rice mix to the baking tray and stir all together.
9. Assemble in a bowl and top with pomegranate seeds.
